The first time I sat down for dinner with my Telugu friends, I was surprised to note a pattern. Leaving the gravies or daal aside, the first set of bites are that of rice, mixed with ghee and podi or with a pickle! If it's a chutney type or a thokku pickle, all the better! So here's a typical thokku pickle from Andhra- the Ginger pickle, locally known as 'Allam Pachadi'. With the spicy after notes typical of an Andhra delicacy and a balance of sweetness added by jaggery and the satisfyingly familiar soul of ginger, this is a kind of pickle you keep coming back to!

Andhra's Ginger Pickle or Allam Pachadi

Ginger pickle, also known locally as 'Allam Pachadi', is an Andhra’s traditional pickle. This pickle is known for its savoury masala, ginger’s pungent spicy aroma, tamarind’s tart sourness and sweetness of jaggery, blended to perfection. Enjoyed during every meal in Andhra, it is a favourite amongst the locals who loves the extra flavour with their meal. Prepared from fresh ginger roots, dry red chillis, sour tamarind and jaggery, this pickle is filled with goodness. If one is health conscious who wants best flavours with their meal, nothing is better than the traditionally made Andhra’s Ginger Pickle. It is in a paste form more than the usual pickle form, characterized by its distinct aroma and studded mustard seeds.

Talking about the goodness of the pickle, ginger or ginger root is widely used as a spice and a traditional medicine to cure a ton of ailments. Ginger comes from a family which also includes medicinal plants like turmeric or haldi and cardamom or elaichi. Ginger known for its healing properties; it was one of the first exported spices from Asia. 32% of the global production of ginger is led by India, followed by China, Nigeria, and Nepal. India being the largest producer of ginger is at 7th when it comes to ginger exports. This data tells how much we Indians love ginger.

Ginger is thought to lower cholesterol levels, reduce the production of cancerous cells, and reduce inflammation caused by arthritis in a human body. Ginger also has pro-biotic properties that helps one fight with bacterial infections and parasites that comes with eating sea food. Other ingredients of the pickle like tamarind has similar properties as that of ginger. Apart from Tamarind and Ginger, Jaggery is known to be better than sugar and other artificial sweeteners.
